A Sofaer is a Scribe. One who is trained and will always copy (never write from memory) each and every letter directly from a scroll that was exactly and very accurately copied from . . . . the original. He will never, under any circumstances, change even one letter or dot or stroke of the original to the copy. If he makes a mistake that can not be corrected, the scroll is considered un-usable.
It was the Sofaer who transmitted the entire writings of Holy TaNaKah ("Old Testament" Scriptures) from Moses - Mt. Zion - to modern times, accurately and complete. Hebrew law insisted that it be this way and HaShem used this method to provide us, today, a very accurate Book.
With the birth of the Newer Covenant and the inclusion of Gentile co-laborers and their pride, the Torah (law) was discarded. Each man has become a law unto himself. Without Torah mankind is reduced to mahem. The Israel that The G-d of Abraham so carefully put together, with one Temple has become (with the inclusion of the Christian Church) hundreds of totally, lawless, "independant "temples". We are "one body made up of many members" each at war with the other. Modern Christianity equals mahem!
